Description

The client is seeking a Director of Food & Beverage to define and execute the food and beverage vision in alignment with the hotel’s positioning and brand standards. The role will drive innovation across all dining concepts to ensure relevance and differentiation in a competitive luxury market, and will collaborate closely with the Executive Chef and senior leadership to develop award-winning culinary and beverage programs.

The Director of Food & Beverage will oversee all food and beverage outlets, including fine dining restaurants, casual dining venues, bars, lounges, in-room dining, and banqueting. This includes ensuring flawless execution of service standards, optimizing operational efficiency, and implementing strong cost control and revenue growth initiatives. The role also manages budgets, forecasting, and P&L for the entire division, monitors KPIs, and takes corrective action as needed.

The position includes leading and developing a large, multicultural team by fostering a culture of excellence, accountability, and continuous improvement, as well as identifying and nurturing future talent. The Director will ensure an exceptional, personalized guest experience in line with ultra-luxury service standards, maintain visibility with high-profile international guests, and respond proactively to feedback. Key requirements include extensive experience in luxury hotels or palaces as an F&B Director or Assistant F&B Director, proven expertise managing large multi-outlet operations, strong financial acumen, demonstrated people leadership, and fluency in English and French (Italian or German are a plus), along with strong attention to detail and a hands-on, resilient leadership style.
